Rethinking Rotzi

This is a short article about a dish from Switzerland called "Rotzi." It is a dish made out of mostly potatoes, that was usually made by simple farmers, and eaten with there morning coffee. Like most recipes, there are many different variations: Eggs on top, with sliced bacon, pickles, onions, cheese, and even apple! This is a very simple recipe that starts with boiling the eggs until they only a very tiny bit soft, then grating them. Then you add an egg, and fry. The next steps are where the variations come in. You could put anything from cheese to more eggs, apples to nothing!

I like this recipe because I think simple recipes like this are the most delicious, and also the easiest to make your own. The possibilities are endless. Even though it sounds very much like a hash brown, I will still consider making this on my next camping trip.
